A variety of whatever is convenient to pick up from the market. Lots of basil. Fried and diced onions. Sautéed mushrooms, preferably wild and local. Chopped and pan-softened leeks. Turnip greens. Fried pine nuts. Wild rice. Roasted root vegetables, garlic, squash seeds, or bell peppers.

White pepper, mustard seed, and paprika can be liberally applied. Rosemary, coriander, and tarragon can be wonderfully complimentary.
